The Tabachera

The Tabachera

La Tabachera: a craft amber beer, ideal with roast meats, aged cheeses, and flavorful dishes.

DESCRIPTION

Tabachera is a top-fermented Italian beer with an intense, malty, and enveloping character. The source text attributes it to the Zago brewery, but the beer is actually linked to the Birra Amarcord brand. The reference to tobacco also requires clarification: the name doesn't indicate the use of tobacco leaves in its production. Rather, it evokes the Romagna imagery evoked by the brand, while the toasted nuances perceived during tasting derive primarily from the malts and the production process.

With an alcohol content of around 9%, La Tabachera belongs to the strong beer family and can be compared to the Belgian Strong Amber Ale style. It's therefore a structured amber beer, in which the sweetness of the cereal, the alcoholic warmth, and the aromas of ripe fruit create a complex sip. It's not designed to be drunk quickly, but rather to be enjoyed slowly, perhaps paired with flavorful dishes.

A full-bodied amber beer

In the glass, La Tabachera generally presents a deep amber color, with highlights that can range from bronze to copper. Under certain lighting conditions, it can appear almost brown, but it retains enough brightness to distinguish it from more roasted brown beers. This appearance previews the centrality of the caramelized malts and the substantial consistency of the sip.

The head tends to take on an ivory or light hazelnut hue. It can be fine and dense, although it doesn't necessarily last long. The high alcohol content and the composition of the beer can affect its persistence. To obtain a neat head, it's best to use a perfectly clean glass, free of grease or detergent residue.

Carbonation is generally moderate. This isn't an explosive or particularly fizzy beer: the bubbles primarily serve to lighten the softness of the malt and complement the aromatic component.

Aromas of malt, fruit and spices

La Tabachera's aroma profile is dominated by malts. Initial aromas may recall caramel, dark honey, bread crust, and toasted cereals. Allowing the beer to warm slightly in the glass reveals deeper nuances, reminiscent of almond, hazelnut, and dried fruit.

Hints of candied fruit, raisins, ripe apricots, or plums are also possible. These aromas don't necessarily imply the addition of the aforementioned fruits: they can develop naturally during fermentation and from the interaction between yeast, malt, and alcohol. The spicy component is delicate and can recall sweet pepper or certain baking spices, without becoming pungent.

Any sensation reminiscent of tobacco, wood, or a slight smokiness should be interpreted as a sensory description. Beer is not a tobacco-flavored beverage. Notes of roasted wood, dried fruit, and dark malt may simply evoke associations with the scent of a wooden box, dried leaves, or a warm, toasty environment.

The taste of La Tabachera

On the palate, the entry is full and smooth. Malt sweetness takes center stage, with hints of caramel, honey, toast, and ripe fruit. The body is firm, and the texture can appear rounded, almost creamy, especially when the beer reaches the right temperature.

The alcohol component is noticeable and contributes to the sensation of warmth. It shouldn't be aggressive, but rather accompanies the sip and prolongs its persistence. For this reason, La Tabachera can be reminiscent, in intensity, of certain strong Belgian beers or certain meditation drinks, while maintaining its own Italian identity.

The bitterness is moderate and doesn't dominate. It comes into play mainly in the finish, limiting the sweetness and leaving a drier finish. The aftertaste may linger with notes of dried fruit, almond, caramelized malt, and a light toastiness.

Its smoothness shouldn't be confused with lightness. The high alcohol content may be less noticeable thanks to the sweet, fruity flavor, but it still requires careful and moderate consumption.

Recommended temperature and glass

Tabachera expresses its aromas best at a temperature between 10 and 12°C. Serving it too cold will diminish the malt, dried fruit, and spice notes, highlighting only the sweetness and alcohol. If stored in the refrigerator, it's best to let it rest for a few minutes before pouring.

The most suitable glass is a tulip glass or a rounded glass with a slightly narrower mouth. This shape captures the aromas and provides sufficient space for the head. The serving size shouldn't be excessive: pouring moderate portions allows you to better follow the evolution of the beer as it warms.

Food pairings

The malty richness of La Tabachera pairs well with roasted meats, braised meats, stews, and grilled dishes. It's particularly interesting with pork, especially when cooked with rosemary, garlic, or spices. The caramelized notes harmonize with the seared surface of the meat, while the alcoholic warmth supports more flavorful dishes.

Even fatty cured meats like pancetta and lard can be a pleasant pairing, as the alcohol content and moderate carbonation help cleanse the palate. With cheeses, it's best to opt for aged or medium-aged products, possibly paired with small amounts of honey or not-too-sweet compotes.

Mushroom risottos, radicchio dishes, and hearty grain and legume soups are popular first courses. At the end of a meal, it can be paired with a dessert of dark chocolate, almonds, or hazelnuts, as long as the sweetness of the dessert doesn't overpower the beer.

A beer to be savoured slowly

Tabachera is an intense Italian Strong Amber Ale, characterized by caramelized malt, dried fruit, candied notes, and a distinct alcoholic warmth. The name suggests a toasty and enveloping atmosphere, but doesn't indicate the presence of tobacco among the ingredients. Served in an appropriate glass, at a moderate temperature, and paired with rich dishes, it reveals a rich and persistent profile. It's a beer to share or enjoy slowly, always keeping in mind its significant alcohol content.
