- DOC (Denominazione di Origine Controllata), synonymous with rigor and identity, includes wines “Environment","reserve"and "more than”, produced according to rules that guarantee authenticity and consistent quality.
- DOCG (Denominazione di Origine Controllata e Garantita), the highest level, reserved for excellent wines. These wines are subjected to strict controls and a careful official tasting before being released for sale.
Il new wine, the first fruit of the harvest, represents the freshness and vivacity of the moment. It is marketed by November 6 and should be consumed within a few months. This is because its processing does not allow for long aging. On the contrary, the Red wines can mature over time. Especially if refined in oak barrels or barrique.
