How can you tell if cloves are still fresh?

A quick and easy method to check the freshness of a whole spice (such as cinnamon sticks or cloves) consists of immersing it in a glass of water.

The behavior of the spice in water is a clear indicator of its condition:

  • se sinks quickly, meaning that it still retains a good part of its essential oils and is therefore fresh and aromatic;
  • se remains suspended or floats in an upright position, is still considered good quality and can be used without problems;
  • if instead floats on the surface in a horizontal position, the spice is now old and depleted of aromas, since it has lost most of the volatile aromatic substances that determine its weight and density.

This water test is particularly useful in the kitchen to distinguish spices that are still rich in aroma from those that need replacing, thus ensuring better results in culinary preparations.
