When a freshly baked cake tends to stick to the mold, there are some simple tricks to detach it without ruining its shape.
First, it is useful to gently pass the thin blade of a knife or a flat spatula along the entire inner edge of the pan: this helps separate the sides of the cake from the sides, preventing it from tearing during removal. It's important to do this slowly and gently, so as not to damage the surface of the cake.
Afterwards, you can proceed to heat the bottom of the mold slightlyThis step allows the residual heat to soften any solidified fats (such as butter or oil) that might be holding the dough together, making it easier to remove. You can use a warm, damp cloth placed under the mold, or briefly expose it to very low heat or a griddle.
Finally, it will be enough turn the mold upside down and gently tap the bottom several times on the table or on a surface covered with a tea towel, until the cake comes away evenly.
