A simple trick for prevent fresh pasta from sticking during cooking it consists of adding a spoonful of water to the water extra virgin olive oil.
Fresh pasta, in fact, contains a greater amount of moisture than dried pasta and is therefore more delicate: during boiling, it tends to stick to the edges of the pan and to other pieces of pasta, risking forming lumps or falling apart. The oil, distributed in the water, creates a thin protective film on the surface of the pasta which reduces friction and prevents adhesion between the sheets or shapes.
For optimal results, in addition to adding oil, it is also important to:
- use plenty of water well salted, so that the pasta has the necessary space to move freely;
- mix gently in the first few minutes of cooking, when the risk of sticking is greatest;
- respect i short cooking times typical of fresh pasta, so as to preserve its consistency and flavor.
Thanks to this little trick, the fresh pasta remains well separated, smooth and ready to receive the sauce without difficulty.
