Brunello di Montalcino sauce

Place the Brunello di Montalcino in a saucepan with the shallot and a bunch of aromatic herbs, simmer until the liquid has reduced by at least half.
Filter into a non-stick pan and over a very low flame, add a knob of butter and a little salt.
