Ingredients

  • 600 g yellow pumpkin (clean and seedless)
  • 100 g onion (finely chopped)
  • 100 g celery (in pieces)
  • 100 g carrots (in pieces)
  • 200 ml vegetable broth
  • 2 spoon(s) extra virgin olive oil

Preparation

Prepare the vegetables

Wash and clean the pumpkin, remove the peel and seeds, and cut it into regular cubes.

Finely slice the onion, celery and carrot.

Heat the oil in a saucepan and sauté the vegetables until soft and fragrant.
